Made from fermented rice, rice vinegar is a staple in a lot of Asian cooking. Milder and slightly sweeter than a lot of other vinegars, you'll find rice vinegar in recipes that call for ingredients such as soy sauce.
Add a dash into your rice while its cooking to create lighter and fluffier rice - the acid of the vinegar breaks down more of the startches inside your rice. But you can also use it in your marinades and sauces.
