This traditional Sardinian pasta is essentially small pasta balls which have been slightly toasted leaving them with a nutty aroma.
Light and versitial use it in hot or cold dishes, we wont judge.
Fregola takes on flavour superbly - the slightly rough shape means they hang onto sauces and flavours easily. We have included a few ideas below but this is a great ingredient to use your imagination with:
- Try it with a slightlty Moorish twist - cook it in boiling water then mix with a harissa based tomato sauce and Merguez sausages
- For a light summer salad try tossing it, once cooked, with diced cucumber, mint and lots of good quality oil
- For the truly adventurous you can even use Fregola to make porridge!
